During summer months, she likes to have rice salad as it is easy to carry around in BBQ or picnic. Here’s how you make it:

  • 2 cups of dry brown rice
  • 2 cups of vegetable broth
  • 1 diced onion
  • 1 diced zucchini (small)
  • 1 medium sized mushroom, diced
  • 2 carrots(julienned)
  • 2 tsp. Lemon juice, salt and pepper
  • 1 tablespoon olive oil
